The timing is a bit eerie on this one. Have you seen the movie the Menu? Dining here starts out that way. You take a boat to an island for some snacks and some cultural references to the food. You then go to a small floating structure in the fjords that is built like a salmon eye. You get some presentations on the ecological and environmental issues facing feeding the world and then how dining can harvest unknown sources of food and still be presented in delicious ways. The message is important yes but it has to be ultimately tasty and Iris has it in spades. Now I already knew this because I had eaten at the chefs former restaurants. But most going here will probably do so for the adventure factor. it is an experience for sure. well thought out to portray the Norwegian traditions nd what the future can bring in dining. Sometimes the great dining experiences are getting to the place itself and this surely factors into the enjoyment.
