Make the trip to Tropic just for the food...we tried several plates of their two meat/two side options and loved it all. Really good barbecue! We got the three meat, three side plate to share (because why wouldn't you? A single plate is $11.95, double I forgot but the triple is $19.99. Not many options in the area but this is THE option. I had a two-meat plate w/ beans and potato salad. The brisket was perfectly fat but kinda disappointed in the bbq sauce. It was good but not great. The sweet chicken was a bit dry and I had to liberally dunk it in the bbq sauce. I got the beans and potato salad because it was on some sort of tip/secret menu on the board. It was interestingly satisfying when mixed. Stole some corn bread from my daughter and dunked it in the Frankenstein mix so I could complete the process of hyperlipidemia in my bloodstream. After eating in Torrey and in Bryce IDK BBQ was like a warm blanket in the cold. And the fact that it was OPEN is a major bonus. So my first interaction with this business was a phone call where I attempted to place a to go order, only to be told by staff that they had customers waiting so if I wanted to order, I needed to do it online as they couldn't accommodate me over the phone. Placed the order online and was pleasantly surprised that it was ready in about 15 minutes despite how busy the restaurant supposedly was. While the 3 meat plate was tasty (but lacking in any kind of "smokiness"), I was tremendously disappointed with the small portion size of the meats for $22. You know it's a bad sign when you go to a BBQ joint and don't SMELL the smoker. Good BBQ smoke meats for hours upon hours, which is why the smoker is typically left on. That wasn't the only disappointing part - 1. Fountain drink machine did not have ice replaced in the hour I was there. 2. The staff doesn't understand the cuts. I simply asked if they had baby back ribs and was told "yes." They served some pork loin item. 3. Cole slaw is supposed to be fresh? Nope. Saw them pull out a bag of Dole cole slaw and dump mayo on it in front of me before mixing it up. Either lie about the freshness or make your "secret" slaw in the back to justify the disproportionate price for the item. 4. The brisket tastes like the warm water they store it in (think how hot dog carts keep their hot dogs). If you see lines for this place, don't be fooled. Our son got married last weekend at Bryce Canyon so we had IDK cater the luncheon afterward. It was fantastic! They had the buffet all set up and ready to go at the time we'd requested and it was so delicious! We had the brisket, pork and chicken, along with beans, coleslaw and cornbread muffins. Everything was perfect. The meats were tender and so flavorful and they had a jar of barbecue sauce on each table so everyone could add what they liked. It had really good flavor, but we had what seemed like more fat than meat. We came towards the end of day so I'm guessing we just got what was left for the day. The sauces also had just alright flavor, but tasted more like A1 steak sauce. Really cool ambiance inside. It was really moist, slightly sweet, but not overly sweet, my favorite. We sat at a table near the front door, but we were cold so we moved to the room just off the front door.
