Had such a great late‑night experience at Hatch! We did the courses menu and added a few skewers and a drink during happy hour -- and I love that happy hour applies anywhere in the restaurant, not just at the bar. Their corn tower and the match brownie dessert were amazing! Making reservations online was super easy, and the staff were all wonderful. Big shoutout to Des, who was amazing at explaining the menu and really made sure we enjoyed every dish. You can tell they genuinely care about your experience. They validate parking for up to 3 hours, which is great, but definitely keep an eye on the time because it gets pricey after that. It's been a while since I've last been to Hatch (almost 3 years!), but I was in the area, was looking for a quick bite, and decided to give it another go. FLAVOR (3/5): 1. BEEF TONGUE A LA LENGUA: They changed the sauce of the beef tongue from when I last had it a few years ago. It was okay, but I noticed the sizing/cut was different between my skewer and my friend's skewer. Flavor-wise, I wanted more of the yakitori grilled flavor. 2. PORK BELLY: The pork belly was okay. I'm comparing it to the pork belly skewer I get at Shinsengumi Yakitori in Gardena, which is a slightly thinner cut and has a special salt sprinkled on top that's a little more umami than what they serve here. 3. THIGH & GREEN ONION: Good, but just okay. SERVICE (3/5): Service was okay. I was with my friend, and we ordered the same skewers, but received them at different times. Overall: 4 stars Mixed reviews for this Michelin restaurant. I found portioning for the non-happy hour to be quite expensive and small compared to peers of similar conception and technique. I did find the sauce accompaniment powerfully uplifting and paired well with the pork. (Karaage: A) - Battered in squid ink, this blackened chicken is crisp and well seasoned with saline and spice. I think an aioli would be better suited for the subtleness of the black garlic, but could see the sourness of the ranch pairing well with chicken. They have a very interesting menu with very creative fusion sushi and Yakitori (grilled chicken) or Kushiyaki (grilled skewers in general) items. I've been to Hatch at least four times, and the atmosphere has been consistently terrific. Located in a mall in the heart of DTLA, we got very lucky in regards to parking and found a free street parking spot immediately outside of Hatch - so that was a great way to kick off my most recent experience there. In terms of flavors, however, some items are far more flavorful than others. The most recent time I dined at Hatch, I ordered the prix fixe menu. Now, I usually don't prefer the prix fixe because I enjoy selecting my own dishes. But I felt like trying something new that evening. And true to my intuition, I think I would've enjoyed my experience more had I ordered a la carte. I wasn't quite full after the prix fixe experience, so I did order agedashi tofu and eel, which were both delicious - and honestly my favorite items at the end of the evening. We had dinner here the other night and it might just be my favorite meal of 2025. There is plenty of parking in the parking structure. The ultra-modern vibe of the restaurant tells you that you are in for a treat. We went with the tasting menu. It is $55 and it is their favorite items. It is a filling meal. We did start with a cocktail. They do have a full bar but we both felt like a cocktail. They had one on the menu and it was delicious. A non-alcoholic gin was used and it was nice and refreshing. The first course in the tasting menu was a miso corn soup. The miso seemed to be a darker version than what you normally get and the sweet grilled corn went perfectly with the saltiness of the miso soup. A wonderful way to begin the meal. Next was the tuna tataki handroll. The thick cut tuna with the tomato and shallot salsa and other flavors was a perfect move towards the next course. The miso beer spare rib was served with some housemate tsukemono. The ribs is marinated in Sapporo for hours. The meat literally falls off the bone. I could easily eat a dozen ribs. The squid ink karaage was next. This is their most popular item. Squeeze the fresh lime on the karaage and dip it into the black garlic ranch for a multi-level flavor experience. Next came the yakitori skewers. The ahi tuna is thick cut and absolutely delicious. The mushroom party is so flavorful. The chicken meatball mixed in the perfect sous vide egg yolk is a fantastic experience. Then the onigiri is the perfect way to end the meal. If you still have room, then you need to get the grilled Fuji apple. A baked Fuji apple with ice cream, fresh berries and an amazing sesame butter cookie. If they sold these cookies, I would buy a dozen. A fantastic meal that is easily my favorite meal of the year. Solid yakitori place with great dishes, fun decor, and good service! I went for the lunch menu with a couple of a la carte orders so I could try more things. Started off with the soft shell crab "taco" that featured a crispy and fresh soft shell crab in their squid ink batter. I loved the mix of crab and spicy mayo with the sweet apple and herbacious flavors from the mint/basil and micro-greens. The squid ink karaage was tasty too! The chicken thigh pieces were tender and well seasoned. The batter was thick but gave a solid crunch. The shiny black garlic ranch dip was interesting and did have a subtle garlic-y taste with the prominent mayo flavors. For the yakitori, the beef tongue was SO tender and well marinated with their sauce. They came in big chunks with a nice charred flavor. I'd come back for this! The mushroom party was also solid with an even more powerful charred aroma and savory taste. I wish the chicken thighs were a little more tender but loved the green onions. I'm not a big pork belly fan but it was well done with a good ratio of meat to fat. The Michael Kelps came with unagi yakitori which was pretty good! Eel sauce and flavors prominent but didn't stand out compared to other grilled unagi. I appreciated the addition of toasted black rice, crispy garlic pieces, and seaweed salad to add textural contrast with the soft unagi and rice. There was a miscommunication with our server regarding our beef tongue order and he was super apologetic about, but also immediately reviewed the rest of the orders to make sure we didn't miss anything else. He checked in often, attentive to our little needs, and was very helpful with answering questions. More importantly, he was honest about me over ordering at first. After scratching one of my initial orders, it turned out to the right amount of food! I liked the showcase of their bar and alcohol types while also featuring anime and Japanese movie posters. The menu is American/Japanese fusion, and it works really well here. We ordered one DineLA set menu and added a bunch of items à la carte so we could try more things. A few standouts for me were the Squid Ink Karaage, Corn Tempura Tower, Wagyu & Wasabi, and the Grilled Rice Ball. Honestly, everything we tried was solid. HATCH is a great example of having food not everyone might know become more accessible for people to enjoy comfortably. Although people might know Japanese cuisine for the sushi and ramen, the eyes of the masses are just beginning to peer into the other wonderful culinary delights Japan has, including yakitori. This world is filled with flames, small plates, and of course, beer. HATCH does a great job of bringing the spirit of yakitori to a more mainstream audience and they bring their own style with them. Design/Location This restaurant is located deep within a mall on the bottom floor. If you looked at this shopping space from the outside you would have no idea where this place would be. In context, even though I found parking across the street at a parking garage and walked where Google maps showed me the location, it wasn't until I passed the tall concrete walls of the shopping plaza and stared down into the sunken courtyard I saw HATCH located right next to an escalator. Once you walk in you see the restaurant is comprised mostly as a long, wide hallway. On one side you see a long row of tables with bulbous lighting hanging from above. On the opposite you see a large continuous slab of dark black quartz (or marble) countertop running from the entrance to the kitchen. A large bar comprises the entrance part of the running countertop whilst long shelves on the walls are ornately dressed with liquor bottles, Japanese novelties, and bottled mystery delights. It screams trendy but functional. Service The servers are kind and know a lot about the food. They give recommendations when asked and assist when needed, although you might need to flag them down for attention at times. Food The food is the star of the show. I was lucky to go to DineLA and try their menu which had sample versions of their menu items. Here's what I felt about them. Miso corny soup - Japanese cuisine usually utilizes miso soup at the beginning of a meal to help start getting the digestive system. This version is no exception. Tastes just like a traditional miso soup with the only difference being the slight sweetness of the roasted corn in it. A traditional start to get your appetite going. Tuna tataki hand roll - appreciated this being a solid piece of tuna instead of chopped up. Tastes very fresh but that's the extent of its flavor. Luckily, we were given some pickled Japanese cucumbers on the side and that added a nice note of brine to the hand roll. Miso beer spare ribs - easily a highlight of the dinner service. Slow braised for over 4 hours and then cooked over fire the caramelized parts have a nice crunch to give a hint of sweetness. It is super tender and easily falls off the bone. It's the best of sweet and savory. Squid ink karaage - a satisfying karaage where it's not too dry but with a black exterior instead of the typical golden brown. Their version of karaage is infused with squid ink in the batter. Served with a black garlic ranch on the side this is best served with lemon squirted on top and eaten with the pickled beet. Chicken meatball skewer - a staple of any yakitori and izakaya you would go to in Japan, HATCH's version is as a good as any you'll find in Japan. Glazed with their yakitori sauced the caramelized areas mixed with the meat gives a delicious bite of chicken. Mushroom party skewer - definitely a party of different mushrooms, this includes shiitake, button, and oyster mushrooms with seaweed flakes on top. The mushrooms take on the flavor of the fire and the delicious yakitori sauced brushed on it. Every bite is a good one and dare I say, a party in your mouth. Hokkaido scallop skewer - the scallops come with a spicy yuzu mustard and when you bite into it it'll slap you in the face and call you Sally. The sweetness of the yuzu hits the back of your tongue and as the sweet, soft scallop lands on your palate it's an enjoyable bite texturally. Yaki onigiri - as a Korean 누룽지 is a staple of favorites which is the crispy rice you find at the bottom of a hot stone pot for a 비빔밥. The crispiness of this dish brings that nostalgia back and it makes for an item that stands on its own but can be a perfect pairing with any of the meats presented. I wish this was brought before the skewers because as the last dish it was too plain. Conclusion HATCH has got it going on and they have a good energy to them. A perfect location to enjoy dinner with a group, a date, or even solo the food will keep you satisfied and it's a good starting point for a weekend night. The "Let's Bone Marrow" was a standout--decadent yet composed. We've been to HATCH twice now -- the first time for my boyfriend's birthday and the second time for Valentine's Day -- and both visits were absolutely wonderful. What we love most about this place is that the portions are thoughtfully sized, which allows you to try many different dishes in one sitting. Everything we ordered was beautifully presented and full of flavor. It's one of those menus where you genuinely want to taste almost everything. The service was also great -- attentive without being overwhelming. We even had the chance to meet the owners, two young brothers, and they were incredibly warm and welcoming. When I told them how much we loved their food, they surprised us with a special cocktail, which made the night even more memorable. HATCH has officially become one of our favorite spots for special occasions. We'll definitely be back. read more

I enjoyed this one so much! The beef tongue is so tender and melts in your mouth Chicken meatball:5/5 three large meatballs on a skewer dipped in a eye yolk tare dip. This one is a must have. This place unfortunately wasn't worth it. My boyfriend usually says you should try a place for yourself, no matter what others think, but this is one of the rare exceptions. I ordered the squid ink karaage and got only four tiny pieces for $9 (see photo). The wagyu skewer was terrorizing, and the bacon-wrapped shishito peppers were decent but very salty. Service was okay, nothing special. They also charge a Kitchen Appreciation fee, which we wished had been mentioned upfront. First time checking this place out and we weren't disappointed! We tried a variety of skewers along with the grilled bok choy, which was served with garlic chips and absolutely delicious. Our favorite skewers were the wagyu, pork belly, thigh with green onion, shrimp, and ahi tuna--each one flavorful and well-prepared. The only one that didn't quite hit the mark for me was the chicken wing. It had a sweet marinade and a bit of black pepper, which was fine, but the texture wasn't the grilled, crispy style I was expecting based on other yakitori spots. The food here overall was really good. I got the shrimp and chicken skewers. The shrimp had a delicious spicy sauce and the chicken was juicy it just needed a bit more salt. I also got a soft shell crab "taco" which was basically like an open face sushi roll. This was also really good with the right balance of flavors. The fries were also very well seasoned with a yummy sauce on the side. I absolutely loved the matcha brownie dessert it was super delicious. However, the Fuji apple dessert was just okay and the apple could have been cooked a bit more because it was kind of hard cutting through it. The inside also was beautiful and perfect for a date night. Our food came out pretty fast and all of the wait staff was really attentive. I would definitely come back here! read more

The wait staff were excellent and very attentive, and suggested we do the tasting menu... so glad we did. The miso beer spare rib was so so good. Came here for a friend's birthday and had the best experience!! I'd say it's like a Asian-American style fusion izakaya with a classy, ambient interior and lots of unique twists on the typical tapas. Everything was so flavorful and felt very experimental, like the squid ink karaage or the corn tempura tower - very creative and culinary masterpieces that tasted great as well! Even the agedashi tofu stood out to us because it was soo good and perfectly sweet & savory. + All the yakitori were beautifully marinated and seasoned so each bite was quite literally a juicy burst of flavor :D Service was super sweet and helped us surprise our friend, and I'm happy to report we got her real good (she never saw the cake and flowers coming hehe) so we truly appreciate the servers for helping us out with that! read more

Cute small plate Yakitori on the lower level of the shopping center. The restaurant is surprisingly spacious. That being said, unless you are traveling solo like I was, I would probably recommend a reservation. They were able to seat me at the bar where I got a great view of the kitchen prep as well as the bartender in action. I skipped drinks this trip and decided to treat myself to their tasting menu. You won't get everything on the menu, but you'll get the best they have to offer and all the fan favorites. Tie for my favorite goes to the Pork Belly & Black Chicken. I left full and considered stopping back for a second meal later on in my trip. Needless to say, I'd recommend and will try to fit in on any future trips to LA. read more
