What I love about Spain is every autonomous region has it's specialties. Then within those regions there's inevitably a number of towns and villages that specialize in something deeper. In Adrall, Mas D'Eroles makes awesome cheese. These Catalan products use raw cow's/sheep's milk, giving to natural yeasts. The flavor is mild with a tinge of earthiness.
