joel chapoulie, the former executive chef at l'express makes a leap from feeding the body to feeding the soul.
on the 3rd floor above his prior restaurant, mr chapoulie takes his teachings from the kitchen to a zen studio called espace 37. he offers private lessons in cooking and in tai chi. i got to have a unique experience in shopping the farmer's market for the best local ingredients to seeing how he selects the wine to bring out the flavors.
mr chapoulie's movements in the kitchen are with deliberate precision and with feeling at the same time. using his senses to see, taste, and to feel the food when it is ready. using almost every part of the vegetables and of the meat down to the bone, nothing is wasted. he explains how to prepare healthy food while not compromising it for taste. the approach to cooking is paired with his approach to tai chi making a unique fusion in eat, drink, tai chi.
