If you only go to one place in Seville, Spain, don't miss the Eslava.
There is nowhere in the world better to experience tapas, the Spanish way of eating in which small snacks are served with drinks, than Seville. Seville is the heart of the Spanish region of Andalucía, known for being the most quintessentially Spanish of all the areas of Spain.
Seville is unmistakably charming. Blue skies, grand palaces, twisting alleys, and a long history of tapas make this city so special. Indeed, Seville has some of the best food and tapas in Spain, including highly traditional tapas bars (El Rinconcillo claims to be the oldest restaurant in Spain) and modern, hip takes on typical Spanish cuisine (Ovejas Negras is a mix of modern gastronomy and Asian influences).
But if your time is limited, and you can only choose one place to experience, choose the bar and restaurant Eslava. The magic of Eslava, more than any other place in the city, is that every dish evokes a sense of comfort and place. A perfect example of this is the famous slow poached egg yolk over a mushroom cake with truffles (Huevo sobre bizcocho). This dish, with the egg yolk artfully and precariously perched high, is clearly meticulously plated and constructed. I thought it looked beautiful, yes, but more in an academic way than something that would draw out my appetite. However, it became clear that in no way was flavor sacrificed for the presentation. In fact, for such a strange looking dish, it was rich, warm, complex, and most impressive, deeply comforting. The same thing happened with the Cigarro de Bécquer, a dish of cuttlefish wrapped in a cigar-like fashion. Although strange looking at first sight, it was rich, flavorful, and tasted almost familiar.
If the tapas and starters are comforting despite their appearances, the entrees are simply the opposite. This is exemplified with what be my favorite dish in the restaurant: pork ribs in a honey and rosemary glaze. Tender, juicy, sweet and savory, these were just as good as they sounded.
Depending what you order, Eslava can feel like a traditional tapas bar or modern gourmet eatery; no matter what, though, the food will make you feel like you are home.

-Eslava has both a bar and a restaurant with slightly different menus
-The Restaurant portion only has about 10 tables, so make sure to book in advance.
