They give the meat a little searing on the burner before it goes into the broth. There are a lot of fatty cuts and the searing really brings out the flavor in the fat. It is really affordable, but not cheap. Birria shouldn't be cheap because it is primarily meat and you want good meat. I am pretty sure this is a goat only birria place which means that I don't think that they have birria de res. There is a bomb juice place right across the aisle so get a pineapple/orange mix and get your birria on.
