Our innkeeper had recommended that we eat here. We tried our first night in town; they were full, so sorry. Alright, based on the aromas we could smell as we stood in the door, my wife then stepped back out on the street and called to make a reservation for the following night. Success this time. Fast forward to the next evening... we were welcomed with open arms. Looking over the menu, it was hard to turn down the 3 course prix fixe dinners. We each started off with a salad. My wife ordered the trout while I had the pork loin. Both meals were excellent, seasoned perfectly as far as we were concerned. My wife had the crepe brûlée while I had the creme caramel for dessert. I normally visit Willamette Vally once or twice a year and always visit Cuvee!!! Classic Alsation French bistro with a great staff, great food and yes a great Chef who you will meet at some point. The menu is very large and I am always surprised when I try something new and it is just as good as some of the nightly specials which I HIGHLY RECOMMEND you get. There is a nice wine list but you can byob from your favorite vineyard for 25. The "Special Lady Friend" and I honeymooned in Paris and as such, we make an effort to seek out proper French bistro food to celebrate our anniversary every year for dinner. It's difficult, because most places are either some kind of "fusion" or overly pretentious modern iterations of French standards. We were hopeful when we saw Cuvée on a quaint, unassuming street nestled in the heart of Willamette wine country! We started by ordering a bottle of Beaujolais. Henrí warned us that particular vintage had a reputation of being rather "barnyard" in taste - and when we took a gulp it was indeed antiseptic, with a hint of manure on the back end. Yet we decided to let it grow on us... We started with appetizers - Escargots á la Bourguignonne and Moules Gratinées, and we both agreed we would happily take a bath in either. They were everything we expected and more, and we gobbled them right up. The appetizers were followed by soup or salad...which really functioned only to cleanse our palettes. Not much to trifle over here...you either get a basic salad or cold tomato soup. Not bad...but no fireworks here. Meanwhile, we joked about how much "merde de cheval" was used in our wine. It was not getting better. We tried to pour it toward the back of our throats to avoid our tongues altogether. We both ordered the Steak Frites cooked rare. The wife had a rare steak and mine was closer to medium-well. Moreover, the steaks were coming apart at the seams, as if the meat glue keeping them together failed entirely. It was tasty enough to eat, but less than we expected. The pomme frites and rémoulade sauce were perfectly fine. After the main course, we abandoned the Beaujolais and left 2 full glasses in a dark corner of the table. We ordered 2 epressos and the New York Style cheesecake for desert. The wife simply can't say no to cheesecake, and we were both glad she didn't. It was delightful. The Good: The Escargots á la Bourguignonne and Moules Gratinées we ordered for appetizers were exquisite. We would happily return to eat more of those again, along with the New York style cheesecake dessert. Henrí was excellent host! The Meh: We ordered the Steak Frites and they were underwhelming. The salad and soup...yep. The Ugly: The Beaujolais. Probably the worst wine we've ever had. Henrí did try to warn us, and shame of us for not going with a local Pinot Noir. In closing, we've vowed return for more appetizers and dessert...and perhaps try something more adventurous than our beloved steak and fries...and order a better, local wine. Next time, we'll embrace Henrí's suggestions more fervently. read more

Absolutely superb! While in town to watch the eclipse we visited a few vineyards and wine tasting spots around Carlton. We asked for recommendations but found the suggestions bland. Then we saw Cuvee. Wow, what luck. I cannot say enough good things about the food, its preparation, the service and the atmosphere. Clearly, Cuvee was totally booked for the evening with large groups. However, we were met at the door and graciously accommodated. Their fixed price meal offered options to meet many tastes. I really enjoyed this experience. Everything really reminded me of a classic country Alsatian more casual spot. Prices were extremely fair, quality was obviously fresh and local, the preparation was simple and really well executed. Pork chop I had was very nicely medium done and succulent. Pan fried oysters in clarified butter was also extremely delicious, the oyster being cooked with perfect texture. Cuvée shines thanks to proprietor Gil Henry. It's always a relaxed yet fine dining experience. While the menu is modest in size, the selections rotate with the seasons. Chef Henry always uses the freshest ingredients and makes sure his kitchen executes the dishes flawlessly. His humor is welcome and his attention to his patrons is warm. The service was substandard--never checked to see if everything was ok, not once. A decent value but everything mediocre at best. Really disappointing. Had heard good things and was looking forward to it. Invited friends from Portland to join us and I was embarrassed they made the drive. There were only 3 other tables occupied in the restaurant on a Thursday night. Our server was warm and friendly and that was the high point along with the first course of wild mushrooms which were fresh but ordinary in butter and garlic along with a semolina cake that was heavy. It got worse from there. Asparagus soup came cloying, lumpy and flavorless with minimal asparagus, neither fresh nor bright. The other option was a boring mixed green with way too much vinaigrette and craisans...really dried cranberries? The lack of detail for a place that bills itself as fine French dining also showed in the homemade bread which was dry and cold and served with butter in foil packets like in a cafeteria. The mains were also poor. A lamb tangine that was over spiced and a sturgeon that was very overcooked on top of good green lentils next to a steamed, bland bunch of summer vegetables with no seasoning or other flavor. Dessert course was a tart mason that was blueberry and chocolate with a dense spongy texture, no discernible chocolate but other off flavors. The other was a chocolate galette that also had a strange, gritty texture and minimal flavor. Another peeve...tried ordering 2 different 2008 Pinot noirs on the small wine list. They were out of both. If it's not available take it off the menu or at least line it out. This place is way past whatever prime it may have had. Do yourself a big favor and drive the extra 10 minutes and eat at Thistle in McMinnville where they execute on the promise of what Cuvee pretends to be. read more

My boyfriend treated me to dinner here after work one day last week. It was a Thursday which is one of the nights they do the prix fixe menu for $25 so he ordered that. I wasn't nearly as hungry so I noshed on the delicious house-made bread and a cone of the hottest fries I have ever had. Crispy on the outside and very fluffy on the inside. And they stayed piping hot all the way through the end of our meal which is unusual for fries. We shared a bottle of nice Gewürtraminer with dinner and then splurged even more for a very rich chocolate dessert. I only had two bites of it because it was too dense and rich for me, but Eddie gobbled it up with ease. My only disappointment was that we were the only customers in the restaurant until our dessert course. On one hand it was nice having that kind of privacy, but it was also a bit awkward sitting in there solo. But our waiter was absolutely fabulous and very knowledgeable about the menu and made some great suggestions for us. read more

We had a wonderful meal here for my husband's birthday. I am surprised by the negative reviews (well, I guess there's only two) because not only did the food taste great, it felt like it was cooked by a seasoned chef who had honed his craft. It was a Saturday evening, and when we first arrived around 6, there was no one seated. We were asked if we had a reservation, which seemed funny since the place was empty, though I suppose the goal is to remind people that reservations are a good idea. The host continued to do this as people came in. By the time we got our food the place was over half full with wine country tourists, birthday party celebrators, and regulars who were familiar with the chef/owner. I very much enjoyed our appetizer of wild mushrooms and semolina cake. It was delicate and lovely. Our main courses were quite good as well, especially my husband's filet mignon. I had the catch of the day which was tender and tasty. Overall, our meal was great, our waiter was excellent, and our experience was positive. I had the beef bourguignon and not only was the meat flavorful and done perfectly but the carrots were heavenly. I have to admit though, probably my favorite part of the meal was the bread. Four us had a lovely dinner out at Cuvée on a long weekend in wine country. This was our first time in The Willamette Valley and really didn't know what to expect. Cuvée was nearby and had positive reviews online but that has in our experience not always led to a great meal. This was different. The food was excellent. We had among us the lamb, salmon, steak frites and pork tenderloin for mains and escargots, clams and mushroom/semolina cake for appetizers and pumpkin soup for starters. The preparations were classic and meats were cooked to the temperature ordered. We had local wines. All interesting and modestly priced. Our server, who turned out to be the owner/chef, Gilbert Henry, was delightful. To top it all off, we mentioned that we were looking for coffee beans for the next morning and he ended up bringing to the table a small bag of beans. How awesome is that? read more

I've been to Cuvee several times, each time with a large party. Despite this fact each visit has been like walking into someones home. We are treated well and served memorable food. I have never dined on a dish that I didn't want to come back for again and again. From the service to the food, to the small intimate setting, Cuvee is a unique dining experience that you really can't forget. Gilbert and Phillipe are a perfect pairing of a delightful dining experience. If you are in wine country for any reason you must make a reservation at Cuvee. Exquisite french cooking with a rustic homemade flair. Close your eyes and you can see Henri's mother standing in her own kitchen somewhere in France. :) Thankfully I am a 20 minute drive away. This past weekend I finally braved myself away from the perfectly prepared Rib Eye and feasted on the Coquilles St. Jacques. Equally as delightful were the fresh vegetables on the side. How often does a brussell sprout rival the main course in taste and texture? The Coquilles St. Jacques featured shrimp and scallops that were perfectly cooked. Now I know what all the fuss is about with this dish. Make sure you make a reservation. The only draw back is that one cannot just walk in and expect to be seated. But then again, that is what makes this place so special and exclusive feeling. Funny...exclusive dining tends to make one think of a snooty and upper crust type of experience, Cuvee is just the opposite. While they very well could take this attitude, Gilbert respects his culinary skills in such a way that he graciously shares his gift with his guests, who very quickly become his friends. read more

I was so mesmerized by the food, I forgot to take any photos! We dined at Cuvee for my husband's birthday, and I'm so glad we did! It was an amazing excellent experience. They were out of the pinot we wanted, but recommended Arbor Brooks pinot, which was delicious! So we were off to a good start. We chose to share an appetizer and a desert, which was plenty to share for two. We started with the champignons (French for mushrooms) with the semolina cake. Delicious. They also served complimentary fresh and warm bread with butter. Then he had the soup, a surprisingly cold red pepper and tomato soup but he enjoyed it. I had the salad which was fresh and nicely dressed. For the entree, my husband ordered the pork tenderloin and I ordered steak frites. He said that the sauce on the pork was incredible. My French fries were some of the most delicious and crunchy I have ever had. The steak was nicely cooked and well seasoned. We finished our meal with the flourless chocolate cake. It was decadent! There was cayenne in it which helped cut the richness. Everything was spectacular. Definitely a good choice for a nice occasion, and for the price of $35 for three courses, it is a great experience for any occasion! It truly IS the best kept secret for absolutely fabulous food. Gilbert owner/chef knows his stuff. From escargot to creme brulee everything is delicious & perfectly prepared & presented. Gilbert choose a French red wine that you could eat. I had Scallops & Shrimp and a wild mushroom appetizer. Thank goodness for the bread. It was the only way to soak up every last drop of the delicate wine sauces that topped off each dish. Is it pricey? It depends. Do you enjoy the best? It is worth whatever you spend!
