Very fresh. Then I had a steak tartare done at the table to my liking (I chose spicy) and it was one of the best I've ever had. The preparation at the table is a nice touch. I've never had anything like that before. Shared it with the rest of the table and we all agreed it was fantastic. For my Plat (main course) the Brochette de Bœuf and it was wonderful.
