This is absolutely the finest habanero sauce on the planet. I can easily go thru a bottle week,…read moresometimes two depending on what I'm cooking and eating. If I'm on a Latin and Caribbean food kick, two bottles easy. The red and green are the most common versions and you can find them on the table of a few of the more authentic Mexican places around town. The red sauce is from ripened mature habaneros combined with tomatoes and spices and is fairly hot as hot sauces go, but not unreasonably so. It is a little fruitier and mellower than their other sauces. The green sauce is from the green immature pods, garlic, and spices. It has a brighter, crisper taste than the red and is a couple notches hotter. The real kick comes from their XXXtra Hot Kutbil-Ik and is an ancient Mayan recipe which is thicker than their other sauces and is made roasted habaneros, tomato, salt, and spices. It's nice and smoky and sharp with a much higher heat index. A few drops are fine for really adding some fire to your food. It also won an award from Fiery Foods magazine. Their latest product is my favorite. The Black Label Reserve is over the top smoky in the tradition of a salsa negra. It's not quite as hot as the Kutbil-Ik, but much smokier with a thinner consistency. Their Caribbean hot sauce is the mildest of the habanero sauces. It uses yellow habaneros combined with carrots, and is a little bit sweet. I really love it on shrimp or seafood dishes where you don't want to overwhelm the delicate taste of the item. They also had a Chipotle hot sauce that is the mildest of all of their flavors. It has a more sweet flavor than any of the others, but also has that smoky, slightly acid punch of chipotle peppers, which are just roasted, dried jalapenos. It's great for brushing on ribs or chicken when you're grilling as the sugar content burns a little bit for a nice char from the fire. You can find the red and green in a lot of regular grocery stores and maybe even the XXXtra Hot in their International isle. For the other flavors you can stop by most any local tienda and they will have all of them. If you're a hot sauce and chile freak, you won't regret taking the time to seek these sauces out.
