We did not expect to find exquisite Mexican cuisine in The Netherlands, but the Amsterdam natives who started Colima a year ago are cooking some of the most delicious dishes we have ever sampled. They have managed to capture the flavors of Mexico while adding some local twists, for example, a white mole served on salsify (a local vegetable similar to asparagus), margarita with dill, and tacos with herring caviar. The owners cook, serve, and explain about the various ingredients. This restaurant is reminiscent of Rick Bayless's Frontera Grill in its early years.
