$7 for shave ice that is made from coconut water but tasted a lot like regular water, is a bit much for me. The Caboose is adorable, and the folks working there are the epitome of Hawaiian friendliness, but the shave ice was overrated in my book. Just was not tasting that coconut flavor, or anything extraordinary in this shave ice experience. If you're craving coco, maybe go with their coconut ice cream instead? Very cool that they have a *literal* truck load of coconuts attached to the Caboose, and their syrups are made from real fruits. Also, the view from the lookout point where they park is pretty cool. This was one of my favorite things in Maui! Call me simple but I enjoy having a nice fresh coconut to sip on and then being able to snack on it afterwards. After you are done drinking the coconut water, you can bring the coconut back to one of the guys and they will cut it in half for you so you can scrape the yummy goodness inside the coconut. Stopped by this Food trailer with my family because my young children had wanted to "drink from a coconut" while here in Hawaii. Totally happened by this place while we were up snorkeling on the western end of the island. Stopped by with very low expectations and left totally thrilled with the experience and the quality of the items we got. Two guys running the operation. One guy taking orders and the other guy carving up the coconuts. They keep the coconuts in an ice chest until you order and then they carve them up for you so the coconut water is cold and tasty. The guy carving them up does a great job carving and getting the coconut ready to drink. After you drink your coconut, hand it back to him and he will chop it in half so you can eat the meat. A brief aside, coconut water was a lot better than I expected and the coconut meat inside was no where near as good as I expected it to be. In fact, we didn't like it at all. The real unexpected treat was that we ordered their coconut gelato. Absolutely AMAZING! So delicious. Maybe the best gelato I have ever had. Seek these guys out if you can. Coconut caboose was an interesting find! We were driving along the highway and decided to stop when we saw a stall. We ended up getting a fresh cut coconut ($8) and it was amazing! The person took a cold one out of the ice chest and cracked it open in front of us! It was super cold and refreshing on the hot day. Maybe it was the season, or maybe it was just a bad batch, but we were zero for three in terms of the things we ordered. We opted for the coconut soda, the coconut slushy, and a fresh raw coconut. The coconut soda was the greatest offender, really had no coconut flavor aside from some mild astringency similar to what one gets with coconuts. Was not too sweet which was a relief but was just sort of yellowed fizzy water with an odd astringent taste. The slushy and the raw coconut were only marginally better, the issue being once again a real lack of coconut flavor. I was sorely disappointed. The one satisfying thing was the shop keep, who talked a good story in satisfying pidgin about his business and the history. Just wish the product was better, we were stuck with three very unsatisfying items. It's hard to give a personable sort of business a one star, that's usually reserved for horrific service so originally I had given them two. But the more I thought about it the items on offer here were just really unacceptably bad, not much to redeem them. Clearly others have had very different experiences here, so as I mentioned earlier it might have just been a bad batch. But that does not change the facts on the ground, which were that this was pretty poor quality stuff. And at this price it was unacceptable. Not a lot of drink options this far out but we would have been better off getting some canned soda at the adjacent Shrimp Shack. read more

This place was one of the highlights of our vacation in Maui. We were staying at the Ritz about 10 minutes from the location of the Coconut Caboose (which is a food trailer towed by a truck) and visited three times over our 6 days in Maui because we loved it so much. You will be spoiled for shaved 'ice' (actually frozen coconut water!) and won't be able to have it anywhere else on the island. Their coconut ice cream is so amazing; definitely try it underneath your shaved ice. We also tried their fresh coconuts where they cut open a coconut right in front of you and once you've drank the water they then split it so you can eat the meat. Seriously the coconut caboose is going to be a global phenomenon very soon I am sure. I really wish there was one in Chicago! (But I guess the fresh coconuts would be harder to come by...) read more

A true taste experience, literally on the side of the road. Saturday around noon, we swung by on our way back from the beach. We'd seen the little truck on the overlook and decided we should stop and check it out. SO glad we did. The owner was amazing, pitching his wares and selling his unique coconut products. Everything coconut you could want. He told us he plants the trees, climbs the trees, makes all his own products from scratch. And he looks the part. even cuts open fresh, young coconuts for you with his machete right there on the spot. My colleague and I had the shave ice, made from fresh coconut water frozen for the shaver. The syrups are made from cane sugar and fresh fruit juice and pulp. Some of the best I've ever had, and a unique flavor profile with the readily apparent coconut flavor in the ice itself. We also sampled the coconut gelato, which was a smooth as you could imagine and rich and creamy. But sitting in the shade and enjoying the ice and chatting up the owner was the highlight of our afternoon. You'll not meet a more exuberant and knowledgeable host on the island.
