One of the vinous marvels of Provence, Clos Cibonne celebrates and vinifies an old Provençal grape, Tibouren, in a way that no other wineries do in the region. They make several cuvées in white, red, and rosé, each distinct and distinctive. I'm a big fan of the easy-drinking red, but the rosés, to my taste, are especially interesting, delicious, and unique. Some rosés are fermented under 'fleurette' (a layer of yeast, just like in sherry) and are intensely minerally and savory, a delicious and lip-smacking wine that goes well with food but also would be lovely by the poolside.
I had a wonderful little visit to the tasting room here and had a nice chat with Caroline, whose name graces one of the cuvées. She told a bit of the history of the Clos, and the differences between the wines. You can of course purchase bottles in the tasting room, and I happily did and enjoyed them a few days later.
A beautiful winery that, amongst a sea of Provençal rosés, makes something unique and delicious. Check it out! :) read more
