The story has it that the creator of the sandwich was playing cards with his friends, and apparently all these men's wives were being too loud for their male ears, much like the macaw (which in Spanish is called la guacamaya), a type of parrot. To stop the so-called squawking, the owner invented the guacamaya sandwich to shut them up. Really sexist undertones but the story has been selling I guess. Alternative origin theories I've seen online include the fact that the sandwich is colorful like the macaw; a funnier one is that these sandwiches are so spicy that they'll make you squawk like a macaw. Whatever the truth may be, the sandwich is nevertheless delicious and spicy! This place is so famous also that a TV crew was filming the guy making the sandwiches!
Bathroom in the back and also a sink to wash your hands so you don't eat these sandwiches recklessly. Bowls were wrapped in plastic bags for sanitation reasons I suppose. TV in the front for viewing pleasure.
