Aptly named since they raise their own pigs in a farm and they make sure they follow practices that are humane and sustainable. Feeding people with respect to the environment. They use the whole pig and nothing gets wasted. I made a dinner reservation a month in advance through their website. It was a simple process. I stopped by for lunch too and there was a line out the door for people without reservations. They do have a takeout window to the side of the restaurant if you want something like a sandwich. You can do their tasting menu or do a la carte. It'll end up cheaper if you did the tasting menu than a la carte. However, I have been eating my way around São Paulo and I knew I would be struggling to finish a lot of food plus, I had a 7am flight the next day. So, I ordered a la carte. I wanted the San Ze Pig (roast pig) but it's too much food. Torresmo de Pancetta + Goiabada + Picles de Cebola Roxa: Crispy pork cracklings topped with a thick sauce made with pickled red onions, and guava. You get 6 pieces. Definitely get this. It was crispy, salty and sweet. Sushi de Papada de Porco + Tucupi Negro + Ameixa fermentada: Pork sushi brushed with black tucupi (sauce made from fermented manioc which looks and tastes similar to balsamic vinegar) and fermented plum. It looks like unagi nigiri. You get 4 pieces per order. I was not given utensils. The items I ordered were meant to be eaten using your fingers. The interior and exterior seem very casual. There's graffiti outside the building and inside the restaurant. Even when you look in Google Maps, it doesn't look like it's a restaurant but an abandoned building. By the time I contemplated adding the San Ze Pig, I was already done with my meal and it was time for me to go back to the hotel. You can check out their menu on their website which you could translate to English to save time on making your selections. They also have menus in English if you ask for it. Service was great and helpful. It was nice light dinner.

I have never been in Japan, but I heard that Izakaya Issa is very authentic and traditional. There were certainly plenty of Japanese speaking customers mixed in with Portuguese. And I, the odd tourist, felt right at home. The bamboo shoot and shitake mushroom appetizers were delectable. The chicken broth ramen was insipid. The Gyukatsu Kare (breaded fried beef with curry sauce over rice) was better, but not the ultra crispy panko planks I've had in some places. Maybe it was because I ordered it at the end of the night. The Brazilian brewed cold sake was really good. Could hardly tell the difference from Japanese sake. But, the highlight of the dinner of Sanma Shio--grilled pike mackerel with sea salt. Inexpensive for Sanma, uber fresh, grilled crispy so that you could crunch up the head and tail! The service was prompt, efficient and very warm. Even the owner came by to chat several times. Arigato gozaimasu! Obrigado! Thank you.

Balaio translates into "straw basket" and they are known for these straw basket lamps which decorate this semi-indoor restaurant. It's a casual restaurant that serves no-nonsense Brazilian-inspired food with locally sourced ingredients. It's located on the ground floor of a private library located on Avenue Paulista (touristy) but is a bit hidden away. We had a local with us who knows this restaurant well. Note on exchange rates, because of the current strength of the US dollar, restaurant food prices will seem like a 65-70% discount from an equivalent in the States. Balaio IMS has a sister restaurant in the Los Angeles California area called Coboco, so their staff runs like a typical US wait staff that is attentive to requests, moves quickly, and most speak English.
