Complimentary appetizers: Crispy tartlets with red tuna tartare and wacame cream; carbon puffs with smoked eel cream and teriyaki gel; Salted moshi, paprika, compté, mimolette
Course 1: Chawanmushi, sea urchin, shimeji, dashi jelly
Course 2: White asparagus in texture, cake, asparagus soup and green cardamom, yuzu kosho
Course 3: Peach from our coasts, koshihikari rice, yuzu butter, green shizo
Course 4: Grilled morel with binchotan (Japanese barbecue), stuffed with Bresse chicken and foie gras, pea and lovage stew, new garlic cream, lemongrass emulsion
Course 5: Sweetbreads in buckwheat scale, nasturtium ravioli with herbs, bear garlic siphon
Course 6: Pre-dessert: pineapple sorbet, basil
Course 7: Pavlova relief, raspberry, red shiso, puffed rice and sakekasu ice cream
I enjoyed all the courses except for course 1. The texture was a little weird for me and the unique flavors weren't ones I'm accustomed to. Overall the experience was very nice. One thing I would nitpick about is the fact they charged us for water. I understand having an additional charge if you wanted wine pairing, but for such an upscale restaurant to charge for water didn't sit right with me
