She took over the business after her grandfather and father and this one oldskool champagne maker; she uses the original wooden (!) press to press the grapes after harvest and there are only 3 in the region that still use this classic method!
Her champagne production is quite low compared to the bigger houses in the region; she produces a few thousand bottles each year. She even labels all bottles by hand! But the taste..... My absolute favourite was her signature champagne "Cuvée Ecolibri" (€16 per bottle). Recommend big, big time to visit, to drink, and to take home with you ;-). Another big plus (besides her lovely & warm personality for a Française) is that's she speaks English. Winning on so many levels, this champagne house!!
