The chef, Jérôme Faure, is extremely talented, and more than deserves the recognition he has had over the past years.
We came there on a wine-business lunch off-season. They had the restaurant opened especially for us, and a specific menu made by the chef according to the wines we were tasting.
Menu:
Whole Burgundy black truffle and foie gras in a brioche, with wild Bigorre pig's bacon and Brussel sprouts
Roasted scallop (from the bay of Saint-Brieux, Brittany), black pudding (from the neighbouring town of Méaudre), pear and almonds, with a spiced cocoa sauce
Crawfish and lobster, oxtail, Jerusalem artichoke
Vercors blue cheese, Amarena black cherry
Citrus and Muscat (sweet white wine) jelly, yoghourt and curry sorbet
Rather impressive and very copious, but overall a perfect match for all the wines that were served that day. The pear and cocoa sauce for the scallops and black pudding was particularly well thought, revealing some sweet pear aromas in the wine.

The restaurant also boasts with a very impressive spirits bar, that would be the delight of many an amateur.
