One of the best vegan restaurants in Santiago can be found inside the quirky and stylish Hotel Bidasoa. Long before the food, stepping into Casa Sanz is an experience. You're greeted by friendly staff and led into a teal wallpapered dining room with an arboretum-inspired pink ceiling, green bar, and artful placemats; then it brings it all home with its creative and tasty food and drinks. If all you get is their sushi, you won't be sorry. For the rolls, try the:
- Murasaki: one of the best bites on this whole trip, marinated tofu wrapped smoked purple cabbage, this is a must
- Spice - Sweet - Tropical: if you're a fan of tempura rolls, as I am, this one is a go-to with crispy shiitake, pineapple, and a touch of sriracha in one bite
- Tataki Mari: a creative and fresh take on tofu topped with chives, ginger, and mango, try if you want something different
Be sure to start with the capeletti de estación, a dumpling-proxy stuffed with mushroom duxelle and marigold seed ricotta, and topped with wild mushroom froth. And round it all off with a pisco sour, chileno-style. This was our last dinner in Santiago and of the entire trip and it was one of the best. read more
