It was our first night in Sao Paulo. After dinner, Guilhotina Bar was recommended in my guidebook and it was close to the restaurant so we decided to check it out. Upon entering, I was initially impressed with the vibe of this trendy bar. It reminded me of the type of spots that I like to frequent back home. The crowd was young and the bar was full. To the point that we hung out at the bar for a bit before we found some seats. Guilhotina Bar is known for their craft cocktails and they didn't disappoint. We're talking the type of cocktails where artistry is part of the equation. And they looked just as good as they tasted. The bartender and several members of the staff went above and beyond in making us feel welcome. A+ customer service. If I lived in Sao Paulo, this would be one of my go-to spots!

Inside, however, it is a wonderland with creative libations, amiable staff, and a diverse crowd. I won't go into loads of detail on the drinks because the menu changes regularly, particularly the top section, which changes based on which guest bartenders are invited on a particular night. Such a cool model, featuring bartenders from around the world! I will say that each cocktail is inventive in w everything from name to ingredients to unusual combinations of flavors and cool combos that cross borders and please palates. Here are some deets on the drinks: -São Paulo-Milano: whatever blend of cachaças they used was the bomb! It also had a pineapple flavor and some rum and mezcal, along with some spices that I'm still trying to identify. -The second custom drink: I know there was elderflower in it, but aside from that, it was a symphony of flavors that was delicious, even though I'm unsure of all the ingredients. Sooo good. The owner, Marcio, is AWESOME, the bartenders are ridiculously friendly, the crowd is chill but not in that "we're trying to be relaxed" type of way. I absolutely loved it here and sort of hope no one ever reads these great reviews so that Guilhotina doesn't get more packed!

Now, I did use Google Maps and when it told me I had arrived, I didn't see a sign or what looked to be an entrance to a bar front, so I kept walking thinking I would come across a giant illuminated sign. I went back and realized I was standing right in front of the entrance the entire time, lol.. noticed the tiny tiny tiny lit up sign high up (not eye-level from the street) and the staff / security maybe standing / sitting by the front of a black gate. You'll walk down a little hallway into the main area of the bar where there tons of picnic tables, beach chairs gathered around little side tables, one place to order drinks and food where you see the menu on the wall. The kitchen is on the opposite end where your food will be delivered to wherever you choose to sit as you'll receive a number. The bar in the back contains cocktail drinks. The noise level isn't extremely loud, but could be depending on where you are sitting. If you're trying to talk to someone to get to know them it might be difficult unless you are sitting fairly close to one another. Atmosphere is really chill. I came here at night and I liked this spot. It was clean, open (outdoors open air), and the people were chill. You can bring your dog. Large groups of friends will do well here. I had cerveja and some food that was really tasty! I would order the same thing again. It was the perfect snack. Unfortunately, I can't remember the name of it off the top of my head anymore. It came on two skewers and I think had pita or some type of bread on the side to use with a spread brought out on a wooden board. We were some of the first people there. We were a big group - 7 adults and 2 children. We ordered lots of things to share. I had some of the falafel, the eggplant, the french fries with zaataar.... I immediately ordered myself a falafel wrap and an additional order of fries to NOT share!! Get some extra tahini sauce to dip those fries into! The space is made up of a big yard and a couple different converted shipping containers. You order the food at the one in the middle, then it is prepared and served at one you passed when you first entered. Keep an eye on the number! If you want to order alcohol, you have to head to the one in the back. I ordered a mojito that was really strong. Not like a, "Oh, this drink is strong! I'm gonna have fun later!" It was more like a, "Oh... This drink is undrinkable." It's what I imagine medicine tasted like in 1804. Other than that, I really enjoyed the space and the food, and I would definitely return.
