What began as a small catering concept grew into a menu centered around chef-created bowls, breakfast burritos, and handcrafted catering designed for today’s community. Nick Fernandez is the founder of Cabaña Grill, a New Mexican Genízaro catering kitchen inspired by the Indigenous and Mexican food traditions of the Southwest. With a background in culinary and food service management, he created Cabaña Grill to blend ancestral flavors with modern catering for Denver and Lakewood communities.
