Boudin is also referred to as rice sausage outside of Louisiana of course, containing lots of green onions, red pepper and other Cajun spices, pork and liver all ground and cooked then mixed with rice prior to stuffing it inside a natural or synthetic casing - it can be smoked or eaten as is, it's often eaten alongside saltine crackers and Louisiana Hot Sauce. That is unacceptable customer service, especially after a customer has spent OVER $1,000 with your business. If you're selling seafood to the public, especially in quantities like this, why aren't you checking the quality of the crabs you're receiving from the fishermen before selling them to your customers?
