High quality sushi rice doesn't break apart at all especially when you dip it gently in the soy sauce. Then again this is a Viet place in Germany that also makes sushi and none of the 3 Viet restaurants I've eaten at in Germany have been that impressive or exceeded my expectations. I guess I can't fault them for only knowing how to cook for Germans since their taste preference for Asian food is different in Germany than it is in California.
